Sweet Tooth Treats
I enjoy making cakes. I love the artistry and detail that goes into making beautiful cakes. I am not a baker, but I do love to experiment with different flavor combinations. My cakes are moist and taste good. I can work with buttercream and with fondant. I am still learning and growing with my skills but I've got desire and determination. Enjoy the pictures.

My "Good Luck" cake
So, I learned a valuable lesson about putting together a cake. Always have supports for your tiers. And, when you have supports, do not decorate the top of the cake, as the "plate" gets turned upside down to support the next tier. Better learned now rather than for a super-important client/event/wedding, etc.

More Practice Cakes
Tried some more cakes, and some more design techniques. I love to experiment with flavors and different decoration ideas I haven't tried before. This week, I am actually working on a "Good Luck" cake. One of the culinary Cast Members that works for us got a new job. So, I've been asked to make her good-bye cake. Cannot wait. I'm thinking one cake will be chocolate with peanut butter filling. The 2nd cake will be sour cream pound cake with a raspberry cream filling. Wahoooo!
However, aside from this week's escapades....last couple of weeks I've practiced flavors and design. Enjoy the pictures!

This cake is a chocolate cake, with chocolate mousse filling and a chocolate buttercream frosting. The flowers were made with a Royal Icing flavored with a hint of raspberry/vanilla extract.

This cake was a vanilla cake with a strawberry mousee filling and a white chocolate buttercream frosting. The white decoration was made with pina colada buttercream.

This cake is a lemon cake with a lemon curd filling. To tone down that tartness, I covered it in a White Chocolate/Strawberry ganache. The daisies are done with fondant.

Cakes for Practice
This cake was a birthday present, to an old friend. It's a 6" chocolate cake with chocolate mousse filling, covered with homemade marshmallow fondant. The border is buttercream, but the flowers are done in fondant as well.
The cake above was just a practice run for frosting, as well as rose buds. It's an 8" chocolate cake with chocolate mousse and white chocolate buttercream. The flowers are a mixture of either buttercream or Royal Icing.

Examples of Cakes
I made this cake for a Expected Mother, of a baby girl. I have the ability to adjust to many different colors.
This is the final cake in my Course 2 from Wilton. I love the basketweave. This style would require 4 day notice, as I would need time to set-up the flowers and such. It can also be done for a few different style cakes, including a cake that could look like a old-style stroller (wicker basket type). The flowers are all made with Royal Icing and the basketweave was done in buttercream, but can also be done a cream cheese frosting.
Here's an example of a fondant covered square cake. The bow and flowers are also fondant. I make a home-made Marshmallow Fondant and can adjust to make a chocolate fondant as well. The cost for fondant is a tad more than butter cream frosting.
Here's a small example of a tiered cake I can make. This was made for my final cake in Course 3 of Wilton, however I can adjust to many different requests. The cakes themselves are covered in Marshmallow Fondant, with a buttercream ruffle boarder. The yellow roses are made out of fondant.

Here's another example of a tiered cake that I made. This was for a client that just graduated from Grad School, in finance. Both cakes are covered in Marshmallow Fondant. The top boarder is fondant balls, and the bottom is a buttercream ruffle boarder. Numbers on top are made from fondant and the topper was store-bought. The cupcakes were made with a cream cheese frosting.
This was the birthday cake I did for my daughters' 2nd birthday. They like color and decorations. The cake is made with buttercream frosting. The top yellow flower is from fondant. The flowers on the top "globe" are Royal Icing. It was meant to be a Tinker fairy's house, as they love Tinkerbell.
A new adventure
I decided this past January that I was going to take up a hobby. I needed a challenge, to keep me interested in life. I always, ALWAYS like to stay busy. I hate down time, I hate relaxation....I like to go, go, go! So...cake decorating classes was my 1st choice. I've now taken all 3 Courses of Wilton Cake decorating instructions. I will soon be taking the Fondant and Gumpaste class, to further my education.
I love a challenge. I love making cakes and decorating them. I am at an intermediate level. However, with enough practice and clients, I hope to be a amazing one day. As my experience grows, so will the amount of examples I have to post. Please keep posted and watch as I grow.
As well, if you are in the North Orlando area and don't want the "gross" Publix cakes...let me know. I might be able to work with you and your cake request.
